Bar Trench is a small cocktail bar in Ebisu known for herbal spirits and absinthe, including traditional absinthe drips with a sugar cube. Opened in 2010 and co-run by bartender Rogerio Igarashi Vaz, it has appeared on the Asia's 50 Best Bars list (No. 43 in 2021). The room is intimate and seats are limited, so it suits a relaxed drink for one or two rather than a group night out.

Seating is limited, so arrive early or expect a short wait at weekends. Like many Tokyo cocktail bars, it may add a cover (table) charge, so check when you sit down.
